Energy Balls With Coconut

These energy balls are quick to make. No dates, dairy-free recipe. I like to keep them around for a quick snack in-between meals or for a nice tea break.

Ingredients

  • ½ cup rolled oats or oat flour

  • 1/2 cup of coconut flakes

  • Plain biscuits (optional)

  • Pinch of salt

  • Vanilla

  • 2 tbsp of coconut milk (mild)

  • 2 tbsp of honey or maple syrup

  • Splash of plant milk or regular milk

Directions

  • Prepare the oats: If you don't have oat flour, grind 1 cup of oats in a mixer, then add it to a bowl
  • Mix the oats, coconut flakes, honey, coconut milk, salt, and vanilla in a bowl.
  • Add a splash of milk and form balls from the sticky dough.
  • Add some more coconut flakes into a bowl
  • Crush plain bisquits and put them into a bowl
  • Roll each ball in bisquits or into the coconut flakes to create two flavor variations.
