These energy balls are quick to make. No dates, dairy-free recipe. I like to keep them around for a quick snack in-between meals or for a nice tea break.

Energy balls with coconut

½ cup rolled oats or oat flour
1/2 cup of coconut flakes
Plain biscuits (optional)
Pinch of salt
Vanilla
2 tbsp of coconut milk (mild)
2 tbsp of honey or maple syrup
Splash of plant milk or regular milk
Directions
- Prepare the oats: If you don't have oat flour, grind 1 cup of oats in a mixer, then add it to a bowl
- Mix the oats, coconut flakes, honey, coconut milk, salt, and vanilla in a bowl.
- Add a splash of milk and form balls from the sticky dough.
- Add some more coconut flakes into a bowl
- Crush plain bisquits and put them into a bowl
- Roll each ball in bisquits or into the coconut flakes to create two flavor variations.
